This was an article I came across while doing some research on growing asparagus, I was also growing a few varietals of strawberries at the time (Berri Basket Rose, Berri Basket White and Temptation). I had been researching permaculture orchards and thought this would be an interesting small scale “permaculture” pot.

Chilean Sea Bass

This is the first rant to pop to my mind as it involves all kinds of wonderful things, a classic shell game, poaching and good old fashioned branding.

Those who have eaten or heard about Chilean Sea Bass usually know it’s at least expensive and many have heard it was endangered and that has connection to the price.

Some may know Chilean Sea Bass was an FDA approved name for Patagonian Toothfish, many fish have multiple names depending on market so that is no surprise.

The deception comes when they fished Patagonian Toothfish to the endangered list, I understand illegal poaching made stock management more difficult, but lets face it, everyone was fishing.

Now Chilean Sea Bass is endangered, so what do we do? Why not add a similar fish to the list of FDA approved names for Chilean Sea Bass?

Well they did just that, added Antarctic Toothfish to the list and Voila, no more endangered Chilean Sea Bass.

Aside from the typical environmental problems, I feel like it needs a unique name for allergy purposes, the Antarctic variety contains a special antifreeze glycoprotein in it’s fat, not found in Patagonian Toothfish.

This can cause reactions in people with sensitivities and make troubleshooting difficult.

Mayonnaise

Ingredients

  • 1/3 Cup Sunflower Oil
  • 1/3 Cup Grape Seed Oil
  • 1/3 Cup Corn Oil
  • 1 Egg
  • 1 tbsp Longo's Dijon Mustard
  • 1/2 tsp Sea Salt
  • 1 tbsp Lemon Juice
  • 1/2 tsp Hot Sauce

Instructions

  • Blend all ingredient until fully emulsified.

Pizza Dough

Pizza Dough

Course: Appetizer, Main Course, Side Dish, Snack
Cuisine: American, Canadian, Italian
Servings: 2 pizzas

Ingredients

  • 3 ½ cups flour organic white, whole wheat
  • 350 mL H2O
  • 2 tsp yeast instant
  • 1 tbsp salt kosher
  • 2 tbsp maple syrup Jakeman's
  • 1 tbsp sunflower oil organic
  • 1 tbsp olive oil unfiltered organic
  • 1 tsp cornmeal coarse

Instructions

  • Add flour to stand mixing bowl with dough hook attachment.
  • Form a well (a small valley) in the center. Pour water into shallow area. Add yeast to water.
  • Add salt to flour.
  • Pour maple syrup into yeast and water mixture.
  • Drizzle oils around outer rim of mixture, over the salt and flour. Let sit for 5 minutes.
  • Mix for 12 minutes on medium speed.
  • Place dough in a bowl lightly coated in oil, turn dough over once.
  • Cover for 1 – 1 ½ hours. Put in a warm spot until doubled in size.
